| Cut each pepper, making a small slit. (If your skin is sensitive to jalapeno oil,
wear thin plastic gloves) Remove the seeds. Carefully wash
them keeping the peppers intact. Place on a paper towel to
drain. Meanwhile, in a small bowl, combine cornmeal, 1 cup flour,
baking powder, and salt. Add 8 ounces of beer (the other 4 ounces
is for the cook). Mix in 1 tablespoon oil. Let stand for 15
minutes. Pour 3 inches of oil in a large skillet and heat to 350
degrees (a medium heat). Carefully stuff each pepper with
cheese. Roll it in the flour and then dip in the batter.
Place it in hot oil and fry until brown on all sides, 1 to 2
minutes. Place on a paper towel to drain. Makes 24 peppers.Prep time: 30 minutes

| Crush Melba toast to fine powder. Mix
cheeses into Melba toast. Melt butter. Dip chicken in
butter. Roll in Melba toast / cheese mixture. Sprinkle with
garlic salt and place on a greased cookie sheet. Bake in preheated
350 degree oven for 30 minutes. Makes 4 servings.
